Preparing the Potatoes

    Boil the Potatoes

    Place the red bliss potatoes in a large pot and cover with cold water. Add 1 tsp of salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to medium and simmer for about 15-20 minutes or until potatoes are tender when pierced with a fork.

    Drain and Cool

    Once cooked, drain the potatoes in a colander and allow them to cool slightly. Cut the potatoes in half or quarters, depending on size, and place them in a bowl.

    Toss with Olive Oil

    Drizzle the olive oil over the warm potatoes and toss gently to coat. This will enhance the flavor.

Making the Herb Cream Mousse

    Whip the Cream

    In a medium bowl, using an electric mixer, whip the heavy cream until soft peaks form. This should take about 2-3 minutes.

    Combine with Cream Cheese

    In another bowl, mix the cream cheese until smooth. Gradually fold in the whipped cream into the cream cheese mixture until fully combined.

    Finely chop the fresh chives and dill, then gently fold them into the cream cheese mixture. Add garlic powder, lemon juice, black pepper, and salt to taste. Mix until well incorporated.

    Transfer the herb cream mousse to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Serving the Dish

    Arrange the warm red bliss potatoes on a serving platter.
