Pollo Alla Valdostana Preparation

    Prepare Chicken

    Preheat the oven to 200°C (400°F). Season the chicken breasts with salt and black pepper on both sides.

    Layer Prosciutto and Cheese

    Place a slice of prosciutto on each chicken breast followed by a slice of fontina cheese.

    Sear Chicken

    In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown.

    Add Mushrooms and Bake

    Add sliced cremini mushrooms to the skillet around the chicken. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.

Farrotto Preparation

    Sauté Onions and Garlic

    In a separate pot, melt butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Cook Farro

    Add the farro to the pot and stir for a couple of minutes. Gradually add the vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue this process for about 25-30 minutes until the farro is tender.

    Finish the Farrotto

    Once the farro is cooked, stir in the grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
