Juicing the Pineapple
If using fresh pineapple, cut the pineapple into chunks and blend it until smooth. Then strain through a fine mesh sieve to extract the juice. Measure out 1 cup of pineapple juice.

Preparing the Lime Juice
Squeeze fresh limes to obtain 2 tablespoons of lime juice. Make sure to remove any seeds.
Mixing the Drink

Combine Ingredients
In a large pitcher, combine the 1 cup of pineapple juice, 2 cups of ginger beer, and 2 tablespoons of fresh lime juice. Stir gently to mix without losing the carbonation.

Taste and Adjust
Taste the mixture and adjust lime juice according to your preference. If you like it tangier, add more lime juice to taste.

Prepare Glasses
Fill glasses with ice cubes if desired. Pour the pineapple-ginger mixture over the ice.
