Pasta Preparation

    Cook the Gnocchetti

    Bring a large pot of salted water to a boil. Add the gnocchetti and cook according to package instructions until al dente, usually about 2-3 minutes. Reserve 1 cup of pasta water and then drain the gnocchetti.

    Rehydrate the Porcini Mushrooms

    Place the dried porcini mushrooms in a bowl and cover them with hot water. Let them soak for about 15 minutes until softened. Drain and chop into smaller pieces, reserving the soaking liquid.

    Cook the Sausage

    In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

    Sauté Aromatics

    Add the minced garlic and chopped shallots to the skillet with the sausage. Sauté for about 2-3 minutes until the shallots are translucent and fragrant.

    Add Mushrooms and Wine

    Stir in the rehydrated porcini mushrooms and pour in the white wine. Cook for 3-4 minutes until the wine is reduced by half.

    Create the Cream Sauce

    Reduce the heat to low, and add the heavy cream to the skillet, stirring to combine. Allow the sauce to simmer for about 5 minutes until it thickens slightly.

    Combine Pasta and Sauce

    Add the cooked gnocchetti to the sauce, tossing to combine. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is achieved.

    Season and Serve

    Stir in the grated Parmesan cheese, salt, and black pepper. Toss well to combine. Serve immediately, garnished with fresh parsley.
