Meatloaf Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Meatloaf Mixture
In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and chopped parsley. Mix until well combined.

Shape the Meatloaf
Transfer the meat mixture into a loaf pan and shape it into a loaf. Smooth the top with a spatula.

Bake the Meatloaf
Place the loaf pan in the preheated oven and bake for 1 hour or until the internal temperature reaches 160°F (70°C).

Add Red Wine
Pour in the red wine and bring to a simmer. Allow it to reduce by half, which should take about 10 minutes.

Add Beef Stock and Herbs
Stir in the beef stock and fresh thyme. Continue to simmer for another 10-15 minutes until the sauce thickens.

Season the Sauce
Season with salt and black pepper to taste. Remove from heat.

Serve the Meatloaf
Once the meatloaf is done baking, remove it from the oven and let it rest for 10 minutes. Slice and serve with the Bordelaise sauce drizzled on top.
