Method

Cake Preparation

  1. 1

    Preheat and Prepare

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened butter with the sugar until light and fluffy, about 3-4 minutes.

  4. 4

    Add Eggs and Mix

Add the eggs one at a time to the butter mixture, mixing well after each addition. Stir in the lemon zest.

  5. 5

    Combine Wet and Dry Ingredients

Alternate adding the dry ingredients and milk to the egg mixture, starting and ending with the dry ingredients. Mix until just combined.

  6. 6

    Add Limoncello

Gently fold in the limoncello until evenly distributed in the batter.

  7. 7

    Bake the Cakes

Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  8. 8

    Cool Cakes

Once baked, remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to wire racks to cool completely.

Lemon Syrup Preparation

  1. 9

    Combine Ingredients

In a small saucepan, combine sugar, water, and lemon juice. Cook over medium heat until the sugar dissolves.

  2. 10

    Add Limoncello

Remove from heat and stir in the limoncello. Let it cool.

  3. 11

    Soak Cakes

Once the cakes are cool, poke holes in the top of each layer with a toothpick and brush the lemon syrup generously over each layer.

Frosting Preparation

  1. 12

    Beat Butter

In a mixing bowl, beat the softened butter until creamy.

  2. 13

    Add Sugar and Flavoring

Gradually add the powdered sugar, mixing until smooth. Add the limoncello and lemon zest, mixing until well combined.

  3. 14

    Frost the Cake

Place one layer of the cake on a serving platter, spread a layer of frosting on top, and then place the second layer on top. Frost the top and sides of the cake.
