    Prepare the Lemons

    Wash the lemons thoroughly under cold water to remove any wax or pesticides. Pat them dry with a clean towel.

    Zest the Lemons

    Using a vegetable peeler or zester, carefully remove the zest (the yellow part of the peel) from the lemons. Avoid the white pith as it can be bitter. Place the zest into a large glass jar.

    Add Vodka

    Pour the vodka over the lemon zest in the jar, ensuring all the zest is submerged. Seal the jar tightly and store it in a cool, dark place for at least 1 week, shaking it gently every couple of days.

    Make the Simple Syrup

    After the infusion period, prepare the simple syrup by combining 4 cups of water and 4 cups of granulated sugar in a saucepan. Heat over medium heat, stirring until the sugar completely dissolves. Allow it to cool before using.

    Once the simple syrup is cool, strain the lemon-infused vodka through a fine mesh strainer or cheesecloth into a clean bowl, discarding the lemon zest. Mix the strained vodka with the simple syrup in a large pitcher or jar.

    Using a funnel, pour the Lemoncello into clean bottles. Seal the bottles and refrigerate. It can be served chilled or at room temperature.
