Preparation of Marinara Sauce

    Cook the Sauce

    In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes

    Stir in the canned crushed tomatoes, oregano, sugar, salt, and black pepper. Bring to a simmer.

    Simmer

    Reduce heat to low and let the sauce simmer for about 20-25 minutes, stirring occasionally until thickened. Remove from heat and set aside.

Preparation of Formaggio Fritto

    Prepare Provolone

    Cut the provolone cheese into thick slices, about 1/2 inch each.

    Set Up Breading Station

    Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and black pepper.

    Bread the Cheese

    Coat each slice of provolone cheese first in flour, shaking off excess, then dip in beaten eggs, and finally press into breadcrumbs until fully coated.

    Heat Oil

    In a large skillet, heat vegetable oil over medium-high heat until hot, about 350°F (175°C).

    Fry Cheese

    Carefully add the breaded provolone slices to the hot oil, frying in batches if necessary. Cook for about 2-3 minutes on each side until golden brown and crispy.

    Drain

    Remove the fried cheese from the oil and place on a paper towel-lined plate to drain excess oil.

Serving

    Plate the Dish

    To serve, spoon the marinara sauce onto a plate and place the crispy provolone cheese on top. Garnish with fresh basil leaves.
