Prepare the Duck Ragu

Combine Ingredients
Return the seared duck legs to the pot. Add in the chicken stock, bay leaves, and thyme. Bring to a boil, then reduce heat to low and let it simmer for at least 1.5 to 2 hours, or until the duck is tender and falls off the bone.

Preheat your oven to 400°F (200°C).

Prepare Puff Pastry
Roll out the puff pastry sheets on a floured surface. Cut one sheet to fit the bottom of a tart pan and place it in the pan. Roll out the second sheet for the top.

Spread the duck ragu evenly over the bottom pastry layer. Sprinkle grated Parmesan cheese on top of the ragu.
