Chicken Preparation
- 1
Prepare the Chicken
Preheat the oven to 400°F (200°C). Season the chicken breasts with salt and black pepper.
- 2
Dredge the Chicken
Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese. Dip each chicken breast first in flour, then in eggs, and finally in the breadcrumb mixture, ensuring an even coating.
- 3
Bake the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 3-4 minutes per side until golden brown. Transfer to a baking dish and top with marinara sauce and slices of fresh mozzarella.
Marinara Sauce Preparation
- 4
Cook the Marinara Sauce
In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the crushed tomatoes, dried basil, dried oregano, salt, black pepper, and sugar. Simmer for about 15 minutes, stirring occasionally.
Pasta Cooking
- 5
Cook the Tagliatelle
In a large pot, bring salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Assembly
- 6
Combine and Serve
Once the chicken is baked (about 20 minutes), remove from the oven. Serve the chicken over a bed of tagliatelle, spoon additional marinara sauce over the top, and garnish with fresh basil leaves.
