Make the Dough
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolk, white wine (or vinegar), and water. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll the Dough
After resting, roll out the dough very thinly (about 1/8 inch thick) on a floured surface. Cut into circles about 4 inches in diameter.

Form the Shells
Wrap each circle around a cannoli tube, sealing the edges with a little water. Repeat until all dough is used.

Fry the Shells
Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the shells in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Cool the Shells
Allow the pastry shells to cool for a few minutes before gently removing them from the tubes.

Prepare the Filling
In a medium bowl, mix the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and chocolate chips until well combined. Ensure there are no lumps.

Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling. Make sure to fill both ends for an even distribution.

Serve
Dust the filled cannoli with additional powdered sugar before serving. Enjoy immediately for the best texture!
