Fried Calamari

Prepare the Squid
Rinse the cleaned squid under cold water and pat dry using paper towels. Cut the squid into rings if not already done.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until evenly mixed. Gradually add the ice water, whisking until a smooth batter forms.

Heat the Oil
In a large, deep pot or dutch oven, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Dip the squid rings into the batter, allowing excess to drip off. Carefully place the battered squid into the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, then add the dried oregano, salt, and black pepper. Stir to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, allowing the flavors to meld together.

Garnish and Serve
Once the sauce is ready, remove from heat. Serve the fried calamari hot, drizzled with the marinara sauce and garnished with fresh basil.
