Prepare the Romaine
Wash the romaine hearts thoroughly under cold water. Remove any damaged outer leaves and cut each head into quarters, leaving the core intact for stability.

Make the Dressing
In a blender or food processor, combine the garlic cloves, Dijon mustard, Worcestershire sauce, lemon juice, salt, and black pepper. Blend until smooth.

Emulsify the Dressing
With the blender running, slowly drizzle in the olive oil until the dressing is fully emulsified and creamy. Add the capers and pulse a few times to chop them into smaller pieces.
Assembly

Toss the Salad
In a large bowl, add the quartered romaine hearts and drizzle the housemade Caesar dressing over them. Toss gently to coat the leaves evenly.

Add the Cheese
Sprinkle the parmesan cheese crumble over the salad, followed by the freshly grated Grana Padano cheese.

Serve
Divide the salad wedges onto individual plates or serve on a large platter. Enjoy immediately while fresh!
