Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Shape the Bread
Punch down the dough and divide it into equal portions. Shape into small rolls or loaves as desired.

Second Rise
Place shaped dough onto a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

Bake the Bread
Preheat the oven to 375°F (190°C). Bake for 20-25 minutes or until the bread is golden brown and sounds hollow when tapped.

Prepare the Garlic
Peel the garlic cloves and place them in a small saucepan.

Add Thyme (Optional)
If using, add fresh thyme during the last 10 minutes of cooking for added flavor.

Cool and Store
Once done, remove from heat and let cool. Store the garlic confit oil in a clean jar in the refrigerator for up to two weeks.
