Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour and salt. Make a well in the center, and pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Shape and Second Rise
Punch down the dough and divide it into equal portions. Shape them into rolls or loaves and place them on a baking sheet. Cover again and let rise for another 30 minutes.

Bake
Preheat the oven to 375°F (190°C). Bake the bread for 25-30 minutes, until golden brown. Let cool before serving.

Prepare Garlic
Peel the garlic cloves and place them in a small saucepan.

Cook Garlic
Cook the mixture over low heat for about 30-40 minutes, until the garlic is soft and golden. Be careful not to let it brown.

Cool and Serve
Remove from heat and let the garlic confit cool. Serve it in a small bowl alongside the freshly baked bread.
