Marinate the Beef
In a large bowl, combine the beef chuck roast with red wine, beef broth, minced garlic, bay leaves, thyme, salt, and black pepper. Cover and refrigerate for at least 4 hours or overnight for best flavor.

Cook the Pasta
About 20 minutes before the beef is done, cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

Plate the Dish
Once the beef is tender, serve it over the cooked pasta. Garnish with freshly chopped parsley before serving.
