Rinse the quail under cold water and pat them dry with paper towels. Trim any excess fat and season the cavity of each quail with salt and pepper.

Wrap with Bacon
Take two slices of bacon and wrap them around each quail, ensuring the bacon overlaps slightly. Secure the ends of the bacon with toothpicks if necessary.

In a small bowl, combine the olive oil, minced garlic, and fresh thyme. Rub this mixture over the bacon-wrapped quail, ensuring they are well-coated. Let marinate for at least 30 minutes in the refrigerator.

Place the bacon-wrapped quail on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes or until the bacon is crispy and the quail reaches an internal temperature of 165°F (74°C).
