    Prepare the Grain Mash

    In a large pot, combine the grains and water. Bring to a boil and then simmer for about 30 minutes, stirring occasionally. This will create a grain mash.

    Strain the Mash

    After simmering, strain the mash through a fine sieve or cheesecloth to separate the liquid from the solids. The liquid is your base for the Amaro.

Infusion

    Add Herbs and Spices

    In the strained liquid, add wormwood, anise, coriander, gentian root, orange peel, cloves, and cardamom. Stir well to combine.

    Infuse the Mixture

    Cover the pot and let the mixture infuse in a cool, dark place for 1 to 2 weeks. Shake the pot every few days to ensure even infusion.

    Strain the Infused Liquid

    After the infusion period, strain the liquid again to remove the herbs and spices. You should have a dark, aromatic liquid.

    Add Sweetener

    Over low heat, dissolve the sugar in the infused liquid, stirring until fully incorporated. Allow it to cool completely.

    Bottle the Amaro

    Once cooled, pour the Amaro into bottles and seal tightly. Store in a cool, dark place.
