Butternut Lobster Bisque

Method

Butternut Lobster Bisque

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until the onion is translucent.

    Cook the Squash

    Add the diced butternut squash and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the squash is tender.

    Blend the Soup

    Using an immersion blender, puree the mixture until smooth. Stir in the heavy cream, salt, black pepper, and nutmeg. Cook for an additional 5 minutes.

    Add Lobster

    Fold in the cooked lobster meat and heat for another 2-3 minutes.

    Serve

    Ladle the soup into bowls and garnish with chopped chives before serving.

Cauliflower & Brie

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 3-4 minutes until fragrant.

    Cook the Cauliflower

    Add the chopped cauliflower and vegetable broth to the pot. Bring to a boil, then lower the heat and simmer for 15-20 minutes until the cauliflower is tender.

    Blend the Soup

    Using an immersion blender, puree the soup until smooth. Stir in the chopped brie cheese until melted and creamy.

    Season with salt and black pepper to taste. Serve hot, garnished with fresh thyme sprigs.

Shrimp Gumbo

    Cook the Sausage

    In a large pot, heat olive oil over medium heat. Add the sliced andouille sausage and cook for 5-7 minutes until browned.

    Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Sauté for 5 minutes until the vegetables are tender.

    Reduce heat and let the gumbo simmer for 20 minutes. Add the shrimp and cook for an additional 5 minutes until shrimp are pink and cooked through.
