Bake the cheesecake
Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for best results.

Serve
Once chilled, remove the cheesecake from the springform pan. Top with fresh fruit and sprinkle with additional chopped pistachios. Slice and serve.
