    Prepare the Lyonnaise Potatoes

    Peel and slice the potatoes into thin rounds. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potatoes and cook until golden brown and tender, stirring occasionally, about 15-20 minutes. Season with salt and pepper to taste.

    Cook the Bacon

    In a separate pan, cook the applewood bacon over medium heat until crispy. Remove from the pan and let drain on paper towels, then chop into small pieces.

    Prepare the Garlic Salmoriglio

    Finely chop the garlic and parsley. In a small bowl, mix together the garlic, parsley, remaining tablespoon of olive oil, lemon juice, salt, and black pepper to create the salmoriglio sauce.

    Cook the Wagyu Strip Steak

    Season the Wagyu strip steaks with salt and black pepper. Heat a cast-iron skillet over high heat and add a little olive oil. Sear the steaks for 3-4 minutes on each side for medium-rare, or until desired doneness. Let the steaks rest for 5 minutes before slicing.

    Assemble the Dish

    On a plate, serve a generous portion of the Lyonnaise potatoes, top with the sliced Wagyu steak, and drizzle the garlic salmoriglio over the top. Garnish with crispy applewood bacon pieces.
