Blood Orange Gelato Base

    Prepare Blood Oranges

    Juice the blood oranges and strain the juice to remove any pulp or seeds. You should have approximately 1 cup of blood orange juice.

    Make the Custard Base

    In a medium saucepan, whisk together the sugar, whole milk, heavy cream, and a pinch of salt. Heat the mixture over medium heat until it is warm but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Slowly add a bit of the warm milk mixture to the egg yolks while whisking constantly to temper them.

    Combine and Cook

    Pour the tempered egg yolk mixture back into the saucepan with the milk. Cook over low heat, stirring continuously, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Flavorings

    Remove the saucepan from heat. Stir in the blood orange juice and vanilla extract. Allow the mixture to cool to room temperature.

    Chill Mixture

    Cover the cooled mixture and refrigerate for at least 4 hours or overnight for the best flavor.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up.

    In a skillet, melt the butter over medium heat. Add the sliced almonds, brown sugar, and cinnamon.

    Cook while stirring frequently until the almonds are golden brown and fragrant, about 5-7 minutes. Remove from heat and let cool.

    Scoop the blood orange gelato into bowls and sprinkle the crispy almond topping over the top just before serving.
