Make the Crepe Batter
In a mixing bowl, combine the all-purpose flour and salt. In a separate bowl, whisk together the milk and eggs. Gradually add the wet ingredients to the flour mixture while whisking to prevent lumps. Melt the butter and stir it into the batter. Let the batter rest for at least 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of the batter into the skillet, tilting it to spread the batter evenly. Cook for about 2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter, stacking the crepes on a plate.

Prepare the Filling
In a mixing bowl, combine the blue crab meat, cream cheese, chopped green onions, saffron, and Espelette pepper. Stir gently to combine without breaking the crab meat.

Assemble the Crepes
Take a crepe, spoon a portion of the crab filling onto one half, and fold it over. Repeat with the remaining crepes and filling.

Serve the Crepes
Plate the filled crepes and garnish with additional chopped green onions and a sprinkle of Espelette pepper. Serve warm.
