Blackout Cake

Method

Blackout Cake

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Combine Dry Ingredients

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Mix Wet Ingredients

In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  5. 5

    Add Boiling Water

Carefully stir in the boiling water until the batter is smooth. It will be thin.

  6. 6

    Bake the Cakes

Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Chocolate Mousse

  1. 8

    Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave. Let it cool slightly.

  2. 9

    Whip the Cream

In a mixing bowl, beat the heavy cream with sugar and vanilla extract until soft peaks form.

  3. 10

    Beat the Egg Whites

In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.

  4. 11

    Combine Mixtures

Gently fold the melted chocolate into the whipped cream, then fold in the beaten egg whites until fully combined.

  5. 12

    Chill the Mousse

Spoon the mousse into serving cups and refrigerate for at least 2 hours or until set.

Raspberry Paint

  1. 13

    Prepare Raspberries

In a blender, combine the fresh raspberries, powdered sugar, and lemon juice. Blend until smooth.

  2. 14

    Strain the Mixture

Strain the raspberry mixture through a fine sieve to remove seeds, creating a smooth sauce.

  3. 15

    Serve

Drizzle the raspberry paint over the chocolate mousse just before serving.
