Crostata Crust

Vanilla Bean Gelato

Method

Crostata Crust Preparation

  1. 1

    Make the Dough

In a large bowl, combine the all-purpose flour, chilled diced butter, granulated sugar, and salt. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

  2. 2

    Form the Dough

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Apple Filling Preparation

  1. 4

    Prepare the Apples

In a large bowl, combine the sliced apples, granulated sugar, cinnamon, lemon juice, and Texas whiskey. Toss to coat the apples evenly.

  2. 5

    Melt the Butter

In a small bowl, mix the melted butter into the apple mixture until well combined.

Assembly and Baking

  1. 6

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.

  2. 7

    Add the Filling

Pour the apple filling into the prepared crust, spreading it evenly.

  3. 8

    Bake the Crostata

Preheat the oven to 375°F (190°C). Bake the crostata for 45-50 minutes or until the apples are tender and the crust is golden brown.

  4. 9

    Cool and Serve

Allow the crostata to cool for 10 minutes before slicing. Serve warm with a scoop of vanilla bean gelato.
