Cook the Pasta
Bring a large pot of salted water to a boil. Add 2 cups of penne pasta and cook according to package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.

Prepare the Chicken
While the pasta is cooking, season 1 lb of chicken breast with salt and pepper. Heat a tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until cooked through and golden brown. Remove from heat and let rest for 5 minutes before slicing.

Slice the Vegetables
Using a vegetable peeler, create ribbons from 1 zucchini. Slice the jalapeno pepper in half, remove seeds (if desired for less heat), and chop finely. Prepare 1 cup of okra by trimming the ends and slicing them into rounds.

Make the Pesto
In a food processor, combine the sliced okra, a handful of basil leaves, a tablespoon of olive oil, and half a cup of grated Parmesan cheese. Blend until smooth, adding more olive oil if needed for consistency. Season with salt and pepper to taste.

Combine and Serve
In a large bowl, combine the cooked penne pasta, sliced chicken, zucchini ribbons, and jalapeno. Add the okra pesto and toss everything together until well combined. Adjust seasoning with salt and pepper as needed. Serve topped with remaining Parmesan cheese.
