Caponata Preparation

Prepare the Vegetables
Dice the eggplant, red bell pepper, zucchini, red onion, and celery into small, uniform pieces. Mince the garlic.

Sauté the Eggplant
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced eggplant and sauté for about 5-7 minutes until it starts to soften, stirring occasionally.

Add Remaining Vegetables
To the skillet, add the red bell pepper, zucchini, red onion, celery, and minced garlic. Sauté for an additional 5-7 minutes until all the vegetables are tender.

Incorporate the Flavorings
Stir in the capers, green olives, diced tomatoes, red wine vinegar, honey, salt, and black pepper. Mix well to combine.

Simmer
Reduce the heat to low, cover the skillet, and let the mixture simmer for about 15-20 minutes. Stir occasionally to prevent sticking. The caponata should be thick and flavorful.

Finish with Fresh Basil
Once the caponata is cooked, remove it from heat and stir in the fresh basil. Set aside to cool slightly.
