Fried Calamari Preparation

Prepare the Calamari
Clean the calamari by removing the skin, head, and innards. Rinse thoroughly and cut into rings about 1/2 inch thick.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Prepare Dipping Station
In another bowl, whisk together the eggs and buttermilk until smooth. This will be your wet mixture for dipping.

Heat the Oil
In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Coat the Calamari
Dip the calamari rings into the buttermilk mixture, then dredge them in the flour mixture until fully coated.

Fry the Calamari
Carefully place the coated calamari into the hot oil in small batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown.

Drain and Serve
Remove the fried calamari from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot.
