    Prepare the Eggs

    Place the eggs in a single layer in a saucepan and cover them with enough cold water to submerge them completely. Bring the water to a boil over medium-high heat.

    Boil and Cool the Eggs

    Once the water is boiling, cover the pan, turn off the heat, and let the eggs sit for 12 minutes. After 12 minutes, transfer the eggs to an ice bath for about 5 minutes until cooled.

    Cook the Bacon

    While the eggs are cooling, cook the applewood smoked bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble into small pieces.

    Prepare the Filling

    Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Add the mayonnaise, Dijon mustard, crumbled bacon, salt, black pepper, and paprika to the yolks. Mix until smooth.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg white halves. Top each filled egg with a slice of pickled okra, a dollop of pepper jelly, and a drizzle of Dimmit County olive oil.

    Garnish

    Sprinkle with chopped chives for garnish just before serving.
