    Prepare the Base

    In a medium saucepan, combine whole milk, heavy cream, and sugar over medium heat. Stir until sugar is dissolved and the mixture is heated but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and creamy. Slowly add a cup of the warm milk mixture to the yolks, whisking constantly to temper the eggs.

    Combine and Thicken

    Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Flavoring

    Remove from heat and stir in vanilla extract. For different flavors, you can add ingredients like chocolate, fruit purees, or nuts at this stage.

    Cool the Mixture

    Transfer the mixture to a bowl and cool it to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
