Cannoli Preparation

    Make the Dough

    In a large bowl, mix the flour, sugar, cocoa powder, cinnamon, and salt. In a separate bowl, beat the egg and then add the wine or vinegar and melted butter. Combine the wet and dry ingredients until a dough forms. Wrap in plastic wrap and refrigerate for at least 1 hour.

    Prepare the Filling

    In another bowl, mix the ricotta cheese, powdered sugar, vanilla extract, and mini chocolate chips until smooth. Refrigerate the filling until ready to use.

    Roll Out the Dough

    After resting, roll out the dough on a floured surface until it's about 1/8 inch thick. Cut out circles using a round cutter (about 4 inches in diameter).

    Fry the Shells

    Heat the vegetable oil in a deep pan to 350°F (175°C). Wrap each dough circle around a cannoli form and seal the edges with water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    Fill the Cannoli

    Once the shells are cooled, use a piping bag to fill each shell with the ricotta filling. Dust with powdered sugar before serving.
