Preparation of Onion Rings

Slice the Onions
Peel and slice the large onions into 1/4 inch thick rings.

Prepare the Batter
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cider until a smooth batter forms.

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry
Dip each onion ring into the batter, allowing excess to drip off, and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes, then remove and drain on paper towels.

Combine Ingredients
In a saucepan, combine apple cider vinegar, brown sugar, dijon mustard, grated apple, and salt.

Cook the Mixture
Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves and the sauce thickens slightly, about 10 minutes.

Cool and Serve
Remove from heat and allow to cool before serving alongside the onion rings.
