Cornbread

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven to heat up.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, salt, and sugar until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the buttermilk, eggs, and melted butter (let it cool slightly before adding).

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

  5. 5

    Bake the Cornbread

Remove the hot skillet from the oven and add a little butter to grease the bottom. Pour the cornbread batter into the skillet and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Serve

Let the cornbread cool for a few minutes before drizzling with molasses and serving with buttermilk butter.
