Method
Chocolate Cake
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- 3
- 4
Combine Mixtures
Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the boiling water until the batter is smooth.
- 5
Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- 6
Cool the Cakes
Remove from the oven and let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Chocolate Espresso Ganache
- 7
Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
- 8
Combine Ganache Ingredients
Remove the saucepan from heat and add the semi-sweet chocolate chips and espresso. Let it sit for 5 minutes to melt.
- 9
Stir and Cool
Whisk the mixture until smooth and glossy. Let it cool to room temperature until it thickens slightly.
Assembling the Dessert
- 10
Layer the Cakes
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of ganache on top.
- 11
Top with Second Layer
Place the second cake layer on top of the first, and pour the remaining ganache over the top, allowing it to drip down the sides.
- 12
Garnish the Dessert
Top with chocolate shavings and dollops of whipped cream. Place coffee beans on the whipped cream for decoration.
