Dough Preparation

Activate the Yeast

In a small bowl, combine warm water (about 110°F/43°C), sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the frothy yeast mixture and olive oil. Stir with a wooden spoon until a shaggy dough forms.

Knead the Dough

Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

Let the Dough Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat the oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat.

Once the dough has risen, punch it down to release the air. Divide it into 4 equal pieces. Roll each piece into a thin rectangle or oval shape, about 1/8 inch thick.
