Method
Dough Preparation
Activate the Yeast
In a small bowl, combine warm water (about 110°F/43°C), sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the frothy yeast mixture and olive oil. Stir with a wooden spoon until a shaggy dough forms.
Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
Let the Dough Rise
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Baking the Lavash
Preheat the Oven
Preheat the oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat.
Shape the Dough
Once the dough has risen, punch it down to release the air. Divide it into 4 equal pieces. Roll each piece into a thin rectangle or oval shape, about 1/8 inch thick.
Add Toppings
Sprinkle each rolled-out lavash with sesame seeds and sea salt, pressing them gently into the dough.
Bake the Lavash
Carefully transfer the lavash to the preheated baking stone or sheet. Bake for about 5-7 minutes until they are crisp and lightly golden.
Cool and Serve
Remove the lavash from the oven and let it cool on a wire rack. Serve warm or at room temperature.
