Cooking the Herb Chicken

Prepare the Chicken
In a bowl, mix olive oil, dried oregano, dried thyme, garlic powder, salt, and black pepper. Rub this mixture all over the chicken breasts.

Cook the Chicken
Heat a skillet over medium heat and add the marinated chicken breasts. Cook for about 6-7 minutes on each side or until fully cooked through and internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.
Assembling the Salad

Prepare the Salad Base
In a large salad bowl, add the mixed greens as the base.

Add Ingredients
Top the mixed greens with crumbled goat cheese, sliced avocado, roasted golden beets, dried cranberries, chopped walnuts, and sliced watermelon radish.

Slice the Chicken
Slice the rested chicken breasts and arrange them on top of the salad.
Making the Citrus Vinaigrette

Mix the Vinaigrette
In a small bowl, whisk together the orange juice, lemon juice, honey, and olive oil until well combined. Season with salt and black pepper to taste.

Drizzle the citrus vinaigrette over the assembled salad and toss gently to combine.
