    Prepare the chile paste

    Remove stems from guajillo chiles and discard seeds if desired. Toast lightly in a dry skillet 1-2 minutes per side, then soak in hot water for 10-12 minutes until softened. Drain and blend with 1-2 tablespoons olive oil until smooth.

    Toast and toast bread

    Grill or toast sourdough slices until deeply toasted on both sides. Brush with melted butter and keep warm.

    Sauté aromatics

    In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Add minced garlic and sauté until fragrant, about 30 seconds.

    Bloom the paste

    Stir in the guajillo paste and cook for 1 minute to bloom the flavors.

    Add tequila and lime

    Pour in tequila and lime juice; simmer 1-2 minutes to reduce slightly.

    Cook the shrimp

    Add shrimp to the skillet and sauté 2-3 minutes, turning once, until pink and just cooked through.

    Finish with cilantro and seasoning

    Stir in chopped cilantro; season with salt and black pepper to taste. Remove from heat.

    Plate and serve

    Spoon the tequila-lime shrimp onto plates, garnish with extra cilantro if desired, and serve with grilled sourdough bread to mop up the sauce.
