Lemon-Basil Syrup

Make the Lemon-Basil Syrup
In a saucepan, combine 240 ml water, 180 ml granulated sugar, 60 ml fresh lemon juice, and the zest of one lemon. Bring to a gentle boil, stirring until the sugar dissolves. Reduce heat and simmer for 5 minutes to infuse. Remove from heat, add 8 torn basil leaves, cover and steep for 15 minutes. Strain through a fine mesh into a clean container. Chill the syrup completely before using.

Prepare the glass
Fill a tall Collins glass with ice cubes.

Build the drink
Pour 60 ml fresh lemon juice and 180 ml Lemon-Basil Syrup into the glass. Stir well to combine.

Top with soda
Top with 180 ml Fever-Tree Soda Water. Stir gently to combine, releasing the aroma of basil.

Garnish and serve
Garnish with a fresh basil sprig and a lemon wheel. Serve immediately.
