Prepare the shrimp
In a large pot, bring 4 cups of water to a simmer and add 1 teaspoon kosher salt. Add the shrimp and cook for 2–3 minutes, or until pink and opaque. Drain the shrimp and transfer to an ice bath for 5 minutes to stop cooking. Drain and refrigerate until ready to serve.

Make the cocktail sauce
In a bowl, whisk together 1 cup ketchup, 3 tablespoons prepared horseradish, 2 tablespoons fresh lemon juice, 1 teaspoon Worcestershire sauce, 1/2 teaspoon hot sauce, and 1/4 teaspoon salt. Let flavors meld for about 10 minutes before serving.

Plate and serve
Arrange the chilled shrimp on a platter with a small bowl of cocktail sauce in the center. Garnish with lemon wedges and fresh parsley leaves. Serve immediately.
