Prep and season
Preheat the oven to 425°F (220°C). Trim the woody ends of the Brussels sprouts and remove any outer leaves that are wilted. Cut each sprout in half from stem to tip to ensure even roasting. In a large bowl, toss the halved Brussels sprouts with olive oil, kosher salt, freshly ground black pepper, and garlic powder until well coated.

Arrange for roasting
Spread the Brussels sprouts in a single layer on a rimmed baking sheet. Give them some space so they roast rather than steam. Roast in the preheated oven for 20–25 minutes, stirring once halfway through to promote even browning, until the edges are caramelized and the centers are tender.

Finish with optional toppings
If using lemon juice, drizzle it over the hot sprouts and toss to coat. If using Parmesan, sprinkle the grated cheese over the sprouts during the last 1–2 minutes of roasting or immediately after removing them from the oven, allowing it to melt slightly.
