Prep and Cut
Preheat the oven to 425°F (220°C). Scrub 4 russet potatoes and cut them into evenly sized fries about 1/4 inch thick. Optional: soak in cold water 15-20 minutes to remove excess starch, then drain and pat completely dry.

Season and Oil
In a large bowl, toss the fries with 2 tbs olive oil, 1 tsp kosher salt, 0.5 tsp ground black pepper, and 0.5 tsp garlic powder until evenly coated.

Bake Fries
Spread the fries in a single layer on a parchment-lined baking sheet. Bake for 20-25 minutes, flipping halfway through, until edges are golden and crisp.

Finish with Parmesan and Truffle
Remove from the oven. While still hot, sprinkle 0.5 cup grated Parmesan over the fries and drizzle with 1 tsp truffle oil. Toss to coat and return to the oven for 2-3 minutes to melt the cheese slightly.

Toss with 2 tbs chopped parsley. Taste and adjust salt if needed. Serve immediately.
