Brew espresso
Brew 60 ml of espresso using an espresso machine or moka pot and pour into a warmed demitasse cup.

Prepare milk foam
Steam the milk until you have about 15 ml of fine microfoam. Tap the pitcher and swirl to stabilize the foam.

Assemble
Pour the hot espresso into the warmed cup, then spoon the milk foam on top to 'mark' the coffee.

Serve immediately. Optional: lightly dust with cocoa or cinnamon if desired.
