    Prep lobster and produce

    If using store-bought lobster meat, ensure it is chilled and cut into bite-sized pieces. Halve the cherry tomatoes, dice red onion, mince serrano, thinly slice radishes, chop cilantro, and dice avocado just before serving to maintain texture.

Marination

    Marinate lobster with lime

    In a glass or non-reactive bowl, place the lobster meat. Pour over fresh lime juice, add sea salt and black pepper. Gently toss to coat and allow to marinate in the refrigerator for 10-15 minutes until the lobster looks opaque and flavors meld.

Combine

    Add produce and fold

    To the marinated lobster, add the halved cherry tomatoes, red onion, serrano pepper, cilantro, and radish. Gently fold to distribute evenly without mashing ingredients.

Finish

    Add avocado and season

    Fold in the diced avocado. If using olive oil, drizzle over the ceviche and give a final gentle toss. Taste and adjust with additional lime juice, salt, or pepper as desired.

To serve

    Chill and serve

    Chill the ceviche for 5-10 minutes to meld flavors. Serve cold with tortilla chips, cucumber slices, or extra avocado on the side.
