    Prepare the birria braise: Rinse and soak the dried guajillo chiles in hot water for 15 minutes until soft. Drain and set aside.

    In a large heavy pot or Dutch oven, heat olive oil over medium heat. Add the finely chopped onion and minced garlic; sauté until translucent and aromatic, about 3-4 minutes.

    Add the drained guajillo chiles to the pot and cook briefly to bloom their aroma. Stir in ground cumin, dried oregano, salt, and black pepper.

    Add the shredded beef birria meat and 1 cup of beef stock to the pot. Pour in the 2 cups of birria consommé to create a braising liquid.

    Bring to a gentle simmer, cover, and braise in a preheated oven at 325°F (163°C) for 2.5 to 3 hours, until the meat is tender and shreds easily.

    Remove the meat from the braising liquid and shred with two forks. Skim fat from the surface and reserve the braising liquid; you should have about 2 cups of liquid remaining as consommé for serving.

    If using store-bought ranchero salsa, warm it in a small saucepan. If making from scratch, simmer canned tomatoes with a bit of jalapeño and onion, blend to a sauce, then warm gently.

    Warm the market bean medley in a skillet over medium heat until heated through. Adjust with a pinch of salt if needed.

    Warm the corn tortillas in a dry skillet or on a flat pan until pliable and lightly toasted.

    Fry the eggs sunny-side up in a lightly oiled skillet until the whites are set but the yolks remain runny.

    To assemble, place a warm tortilla on each plate, top with a layer of beans, then add a portion of shredded birria. Spoon warm ranchero salsa over the meat.

    Top each plate with a fried egg, then sprinkle crumbled queso fresco and a dollop of sour cream. Garnish with chopped cilantro. Serve with a side of reserved consommé for dipping if desired.
