Fried Chicken

    Marinate chicken

    In a large bowl, whisk together buttermilk, hot sauce, paprika, garlic powder, onion powder, salt, and pepper. Submerge the chicken thighs in the marinade, cover, and refrigerate for 2 hours.

    Prepare dredge

    In a large shallow dish, whisk together flour, cornmeal, salt, black pepper, paprika, and cayenne.

    Heat oil

    Pour oil into a heavy pot to a depth of about 3 inches and heat to 350°F (175°C).

    Dredge chicken

    Shake excess marinade from each thigh, then dredge in the flour mixture, pressing to adhere. Place on a rack while you finish batches.

    Fry

    Fry chicken in batches, turning once, until deep golden brown and internal temperature reaches 165°F (74°C), about 12-15 minutes per batch. Remove to a rack to drain.

Waffles

    Make batter (dry)

    In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

    Mix batter (wet)

    In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.

    Combine

    Pour the wet ingredients into the dry ingredients and whisk until just combined. Lumps are okay; don’t overmix.

    Cook waffles

    Preheat the waffle iron and lightly grease. Pour batter and cook until golden and crisp, about 4-5 minutes per waffle.

Kale Slaw

    Prepare greens

    Roughly chop kale and remove tough stems. Toss kale with a pinch of salt and massage for 1-2 minutes to soften.

    Toss slaw

    In a large bowl, combine kale, shredded red cabbage, and carrot.

    Make dressing

    Whisk mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.

    Dress and chill

    Pour dressing over slaw and toss to coat. Refrigerate 15-20 minutes before serving to allow flavors to meld.

Spiced Maple Syrup

    Combine

    In a small saucepan, melt butter over medium heat. Whisk in maple syrup, chili powder, cinnamon, and salt.

    Simmer

    Bring to a gentle simmer and cook 2-3 minutes to combine flavors and lightly thicken.

    Keep warm

    Keep the syrup warm while the chicken and waffles finish.

To Serve

    Plate a waffle, top with a piece of fried chicken, a generous spoon of kale slaw, and a drizzle of spiced maple syrup. Repeat for remaining portions and serve immediately.
