    Prep and bake the cake layers

    Preheat oven to 350F (177C). Grease five 8-inch round cake pans and line with parchment. If you don’t have five pans, you can bake in batches and rest the batter between batches.

    In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar until evenly combined and free of lumps.

    Wet ingredients

    In a separate bowl, whisk eggs, buttermilk, vegetable oil, and vanilla extract until smooth and well combined.

    Combine wet and dry; add liquid for depth

    Pour the wet mixture into the dry mixture. Stir just until blended and smooth. Gradually add hot water or strong coffee, mixing until the batter is thin and glossy. Do not overmix.

    Distribute batter and bake

    Divide the batter evenly among the prepared pans (about 1.1 cups per pan). Bake for 22-26 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. Rotate pans halfway through baking if using multiple racks.

    Cooling and leveling

    Let the pans rest 10-15 minutes, then turn layers onto cooling racks to cool completely. If domed, level tops with a knife to ensure flat between layers.

    Dark chocolate frosting

    Gently melt dark chocolate with butter until smooth. In a separate bowl, whisk powdered sugar and cocoa powder, then gradually whisk in heavy cream to reach a spreadable consistency. Stir in vanilla extract and a pinch of salt. Let cool slightly before using.

    Chantilly cream

    Whip 2 cups of heavy cream with 0.25 cup powdered sugar and 1 teaspoon vanilla until soft peaks form. Keep refrigerated until assembly.

    Assemble the layers

    Place the first cake round on a serving platter. Spread a thin layer of dark chocolate frosting, then a layer of Chantilly cream, and sprinkle a light drizzle of crunchy pearls. Repeat for all five layers, finishing with a coat of frosting on the exterior. Pipe or dollop additional Chantilly cream as desired on the top.

    Finish and decorate

    Apply a final crumb coat of dark chocolate frosting, chill briefly, then apply a smooth final coat. Decorate the top with remaining crunchy pearls or other desired accents.

    Slice and serve. Refrigerate leftovers in an airtight container for up to 3-4 days; bring to room temperature before serving for optimal texture.
