Prepare blueberry-ginger syrup
In a medium saucepan, combine blueberries, water, sugar, grated ginger, lemon juice, and salt. Bring to a boil over medium heat, then reduce to a simmer for 10–12 minutes, until the blueberries burst and the mixture thickens into a syrup. Remove from heat; mash gently with a spoon to release more flavor; strain through a fine-mesh sieve into a measuring cup. Chill the syrup until cold.

This makes about 1.5 cups of blueberry-ginger syrup. Reserve for assembling drinks.

Assemble the Blueberry-Peach Fizz
To each glass, place 2 tablespoons of blueberry-ginger syrup. Add 2 tablespoons of peach cordial. Fill the glass with ice. Top with sparkling water. Stir gently to combine.

Garnish with a handful of fresh blueberries and a peach slice. Serve immediately.
