    Caramelize Sherry Onions

    In a skillet over medium heat, melt butter with olive oil. Add the thinly sliced onions and a pinch of kosher salt. Cook slowly, stirring occasionally, until onions are deeply caramelized and golden, about 20-25 minutes. Stir in the dry sherry and sugar; continue cooking until the liquid reduces to a glossy glaze and the onions are soft and amber.

    Season Wagyu Patties

    Divide the ground Wagyu into two equal portions. Gently form into patties slightly larger than the buns. Season both sides with 1 tsp kosher salt and 0.5 tsp freshly ground black pepper. Create a shallow indentation in the center of each patty to prevent doming during cooking.

    Toast Buns

    Split the hamburger buns and lightly toast the cut sides in a skillet or on a grill with a touch of butter until golden and crisp.

    Cook Patties and Melt Cheese

    Cook patties in a hot skillet or on a grill for about 3-4 minutes per side for medium-rare. Flip the patties, then place two slices of white cheddar on each patty and cook until the cheese melts and the patties reach your desired doneness.

    Assemble Burgers

    Spread mayonnaise on the bottom buns. Layer lettuce and tomato on each bottom bun, add the cheese-topped Wagyu patties, then top with a generous heap of caramelized sherry onions. Cap with the top bun and serve immediately.
