Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for 3-4 minutes until translucent. Then add the mushrooms and cook until they are soft, about 3-5 minutes. Stir in the sliced hot or sweet peppers and cook for an additional 2 minutes. Season with garlic powder, salt, and black pepper.

Cook the Impossible Meat
Add the Impossible ground meat to the skillet with the sautéed vegetables. Break it apart with a spatula and cook until browned and heated through, about 5-7 minutes, stirring occasionally.

Melt the Cheese
Once the Impossible meat is cooked, reduce the heat to low and place the slices of white American cheese on top of the mixture. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

Prepare the Hoagie Rolls
While the cheese is melting, slice the hoagie rolls open lengthwise without cutting all the way through, creating a pocket.
