Prepare the Ingredients
Gather all the ingredients. Slice the tomatoes into thin rounds and set aside. Clean and wash the lettuce leaves, then pat dry.

Grill the Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and grill until they are soft and caramelized, about 5-7 minutes. Stir occasionally, then remove from heat.

Assemble the Sandwiches
Cut the hoagie rolls in half lengthwise. Layer the salami, capicola, and mortadella evenly on the bottom half of each roll.

Add Cheese and Onions
Place a generous amount of provolone cheese on top of the meats followed by the grilled onions.

Add Fresh Ingredients
Layer the fresh lettuce on top of the grilled onions, and finish with slices of tomato.
Grilling

Grill the Sandwiches
Drizzle the remaining tablespoon of olive oil on the outside of each sandwich. Preheat a grill or panini press. Grill the sandwiches for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

Remove the sandwiches from the grill, slice in half, and serve immediately while hot.
